Nopal cactus (Opuntia ficus-indica) is found along U.S. roadsides in the desert southwest and throughout its native Mexico. Nopals are soft young pads of prickly pear cacti. The vegetative pads have a consistency (texture and taste) between green bean and bell peppers. Nopales contains riboflavin, vitamins A, C, K, B6, copper, iron, potassium, magnesium, manganese, and fiber. Some research show that nopal can help regulate blood sugar. They can be eaten fresh or cooked such as boiled or grilled.
